A Dairy-FREE Alfredo Pasta Sauce!

Creamy Alfredo Pasta

Whatcha Need:
1 pkg. of brown rice spiral noodles
3 cloves garlic, minced
½ tsp. toasted sesame oil
¼ cup almonds1½ cup water
¼ cup leftover sweet rice
4 tbs. sweet white miso
1 celery stalk, chopped with leaves
½ tsp. oregano
1 onion, chopped
1 pkg. button mushrooms
2 tbs. tahini
1 pkg. organic silken tofu

Preparation:

  1. While the noodles cook, sauté the garlic, celery, onion, and mushrooms in oil. Rinse the tofu and mash it into the sauté vegetables.
  2. Grind almonds fine in the blender. Add almonds, water, and rice to the vegetable mixture. Blend everything to a cream.
  3. Add oregano, mirin, and tahini. Towards the end add the miso. Toss with fresh-cooked pasta and serve immediately.

 

Garlic Broccoli

Whatcha Need:
Large bunch of broccoli
1 Tbs of Crushed garlic
2 Tbs of Olive oil
Pinch of Sea salt
2 tbs of water

In a large skillet heat olive oil and add garlic and toast it lightly, add in washed, fresh chopped broccoli and water. Cover on medium low heat and cook until just soft, not mushy.
